RASPBERRY GELATIN SALAD
  • 3 PKGS. (3 OZ.) EACH - SUGAR FREE RASPBERRY JELLO
  • 1 1/2 CUPS BOILING WATER
  • 1 PKG. (12 OZ.) FROZEN UNSWEETENED RASPBERRIES
  • 1 CAN (20 OZ.) UNSWEETENED PINEAPPLE, DRAINED
  • 2 MEDIUM RIPE BANANAS, MASHED
  • 8 OZ. FAT FREE SOUR CREAM
IN A BOWL, DISSOLVE GELATIN IN WATER. STIR IN RASPBERRIES, PINEAPPLE AND BANANAS. POUR HALF INTO AN 11" X 7" DISH.   REFRIGERATE FOR 30 MINUTES OR UNTIL FIRM. SET ASIDE THE REMAINING GELATIN MIXTURE AT ROOM TEMPERATURE. SPREAD SOUR CREAM OVER GELATIN IN PAN, TOP WITH REMAINING GELATIN MIXTURE. REFRIGERATE FOR 1 HOUR OR UNTIL FIRM. MAKES 15 - 1/2 CUP SERVINGS.

BABY POTATO SALAD

  • 5 MINI POTATOES
  • 1/2 CUP FAT FREE MAYONNAISE
  • 2 DASHES PAPRIKA
  • 1 GREEN ONION, MINCED
  • FRESH GROUND PEPPER
  • 1/2 GREEN PEPPER, MINCED

CUT POTATOES INTO SMALL PIECES. LEAVE THE SKINS ON. BRING TO A BOIL IN A POT FULL OF WATER. LET COOK, STIRRING OCCASIONALLY, UNTIL POTATOES ARE TENDER. COOL COMPLETELY. MIX WITH ALL OTHER INGREDIENTS AND STORE IN AIRTIGHT CONTAINER UNTIL READY TO SERVE. MAKES 2 SERVINGS.


SPANISH RICE

  • 8 OZ. ONION, CHOPPED
  • 8 OZ. TOMATOES
  • 8 OZ- RICE -COOKED
  • 1 1/2 CUPS WATER
  • 1 GARLIC CLOVE, MINCED
  • 1 CUP GREEN PEAS
  • 1 PKG. CHICKEN BOUILLON SUPPLEMENT

HEAT 5 TBSP. CHICKEN BOULLION IN POT. ADD ONIONS AND GARLIC. SAUTE UNTIL LIGHT BROWN.   ADD COOKED RICE AND STIR WELL FOR 1 MINUTE. ADD REMAINING BOUILLON AND TOMATOES. LOWER HEAT AFTER BOUILLON COMES TO A BOIL, COVER AND SIMMER 35 MINUTES. ADD PEAS. STIR WELL AND SERVE. MAKES 4 SERVINGS.


BERRY BREAD PUDDING

  • 8 SLICES DIET BREAD
  • 1/2 TSP EACH NUTMEG AND CINNAMON
  • 12 OZ. SKIM MILK
  • 2 CUPS BLUEBERRIES OR STRAWBERRIES OR RASPBERRIES
  • 1/2 CUP BROWN SUGAR SUBSTITUTE
  • 2 TSP. VANILLA
  • 2 EGGS BEATEN
  • 1 TSP. SOFT MARGARINE

TEAR BREAD INTO 1" PIECES TO MAKE 6 CUPS. IN A BOWL COMBLNE MILK, SUGAR AND CINNAMON. STIR IN BREAD AND LET STAND 10 MINUTES.   STIR IN BERRIES AND EGGS. IN AN 8" SQUARE BAKING DISH, MELT MARGARINE AND SWIRL TO COVER BOTTOM OF PAN. POUR IN BATTER AND BAKE 20 MINUTES AT 350F UNTIL PUFFED AND BROWN. MAKES 4 SERVINGS.   1 SERVING = 1 STARCH, 1 FRUIT, 1/4 PROTEIN, 1/3 CUP MILK


RASBERRY BANANA SMOOTHIE

  • 1 POUCH CRYSTAL LIGHT RASPBERRY DRINK MIX
  • 2 CUPS COLD WATER
  • 10 OZ. NON-FAT PLAIN YOGURT
  • 1 BANANA
  • 2 CUPS COLD WATER
  • 1 CUP ICE CUBES

PUT ALL INGREDIENTS IN A BLENDER AND BLEND UNTIL SMOOTH. SERVE OVER ICE. MAKES 4 - 1 CUP SERVINGS.  1 SERVING = 1/2 FRUIT, 1/2 PROTEIN


HOT CHILI SAUCE FOR DIPPING

  • 1/3 CUP WATER
  • 2 TBSP. LEMON OR LIME JUICE
  • 1 TBSP. LOW-SODIUM SOY SAUCE
  • 1 TSP. SUGAR
  • 1/4 TSP. HOT PEPPER FLAKES

IN A SMALL BOWL, COMBINE WATER, LEMON OR LIME JUICE, SOY SAUCE, SUGAR AND HOT PEPPER FLAKES.


PUMPERNICKEL DIP

  • 1 TUB FAT FREE SOUR CREAM - 500ML
  • 1/4 CUP FAT FREE MAYONNAISE
  • PAPRIKA
  • 1 PKG. KNORR VEGETABLE SOUP MIX
  • 3 GREEN ONIONS, CHOPPED
  • 1 PKG. FROZEN SPINACH, THAWED & CHOPPED

BLEND WELL. PUT INTO HOLLOWED OUT PUMPERNICKEL BREAD AND USE THE PIECES OF BREAD AS WELL AS RAW VEGGIES TO DIP.
